The sweet spot for almost any coffee and our Director of Coffee’s personal preference. Certainly what Goldilocks would have chosen. At this degree of roast there is a beautiful balance between the inherent qualities of the coffee and those imparted by the roasting process. The acidity is slightly tempered, mouthfeel is enhanced and all the attractive sugar-browning notes (chocolate, caramel and vanilla) come home to roost.
